He has worked with specialty coffee farmers for 15 years. In 2007, Angel purchased his first property to establish a coffee farm. That same year, he planted the farm with Red Catuai and named it “La Colmena.” In 2009, he began producing coffee and prepared his first microlot for specialty coffee.\u003c\/p\u003e\n\u003cp\u003eAngel has participated in the Cup of Excellence competition since 2011, earning important placements over the years. In 2018, he purchased another property in El Dorado, Santa Barbara, where he planted different coffee varieties. He produced his first coffee from this farm in 2021, and the farm has since produced great and consistent coffees.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eAbout the process Washed DRD:\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eThis coffee uses a Washed DRD ( Dark Room Drying) process that combines extended anaerobic fermentation with controlled drying.\u003c\/p\u003e\n\u003cp\u003eThe coffee cherries are carefully picked at peak ripeness and transported to the wet mill, where they are placed in sealed plastic barrels for 48 hours of anaerobic fermentation. The cherries are then de-pulped, and the parchment, still covered in mucilage, is returned to a plastic barrel for an additional 48 hours of anaerobic fermentation. After fermentation, the coffee is thoroughly washed to remove the remaining mucilage from the parchment.\u003c\/p\u003e\n\u003cp\u003eThe washed parchment is then transported to a dark room where temperature and relative humidity are carefully controlled. Temperatures are kept below 18°C (64°F) to create a slower and more uniform drying process.
