About Wilmer Stiven Parra :
For the past 40 years, Wilmer Parra has cared for his family’s farm, a place passed down through generations and rooted deeply in tradition. Living there with his wife Elena and their son Miller, Wilmer has dedicated his life to coffee cultivation, which remains the family’s main livelihood. Through coffee, they’ve built a life that honors their heritage, supports their children’s education, and maintains a way of living that is closely tied to the land and to the values of hard work and community.
For Wilmer, what makes his coffee truly special isn’t just the variety or the quality of the beans; it’s the fact that every step of the process is done together as a family. From planting and nurturing the trees to harvesting, processing, and drying, each stage reflects years of shared dedication and care. A few years ago, Wilmer began a new chapter by venturing into specialty coffee production after discovering the Maragogipe variety, known for its large beans, distinct aroma, and exceptional cup quality. This shift marked a transformation toward greater quality, sustainability, and pride in the family’s work, carrying their legacy into a new era.
The Roast Profile and Roast Approach :
For this Maragogipe, we set out to emphasize its vibrant fruit character and delicate structure. Because this variety produces large, less dense beans, we approached the roast with a gentle but attentive hand to ensure even heat transfer throughout the batch. We applied moderate energy during the early stages to encourage sweetness and development without risking scorching or tipping. As the roast progressed, we allowed for a slightly extended Maillard phase to deepen the fruit complexity while maintaining a clean, bright profile. By approaching first crack with care, we highlighted the coffee’s juicy acidity and layered notes of tropical fruit, red berries, and floral undertones. The result is a lively, expressive cup that showcases the elegance and clarity of this unique varietal.
