About the Etiope varietal:
Etiope is an Ethiopian coffee varietal. Fredy has always loved experimenting with new, high-quality varieties on his farm, and Etiope is one of his most exciting additions yet. After sourcing seeds from a friend in El Salvador, he planted around 3,000 Etiope trees and has been thrilled with the results. 2025 marks the first year this rare variety has produced enough for a commercial lot, and Fredy is already planning to plant more. We’re excited to share this unique variety from Fredy.
About the Farm:
Fredy Orantes is a leader among Santa Rosa’s coffee growers. He is known for his dedication to quality and his careful approach to every step of harvest and processing. Whether working with larger lots or small micro lots, Fredy’s commitment to producing the best coffees possible is clear in every bag that leaves his farm.
Sustainability is central to Fredy’s work. He maintains a diverse mix of native trees and fruit trees on the farm while enriching the soil with composted leaves, branches, and coffee pulp. His unfenced farm welcomes birds and wildlife to pass through freely, reflecting Fredy’s belief in caring for the land while producing exceptional coffee.
About the Processing:
Fredy’s workers harvest this coffee at the peak of maturity. He places the cherries in a clean sack in a sunny spot for 48 hours to pre-ferment. Then, the cherries are moved to a raised drying bed to dry, which takes about 22 days. When fully dry, the coffee is transported to a dry mill in Santa Rosa.
The Roast Profile and Roast Approach:
When we received this coffee, we roasted it five different ways to explore what would showcase it best. We found we preferred a shorter drying phase paired with a longer Maillard, as it highlighted the coffee’s delicious acidity while rounding it out with plenty of sweetness, which is precisely what we love. The result is a bright, lively cup that still carries a comforting sweetness, striking the perfect balance between clarity and depth.
