About Jesus:
Jesus has been instrumental in motivating his community in Selguapa to embrace specialty microlot coffee production, leveraging his seven years of experience with the Honduran Coffee Institute (IHCAFE). At IHCAFE, he supported coffee growers nationwide by addressing challenges like soil analysis and proper harvesting and processing techniques. His mission was to inspire producers to invest in specialty coffee and adopt better farming practices. In 2018, this vision began transforming Selguapa when Jesus connected with Rony Gamez, a former IHCAFE colleague and founder of Cafe Raga, which provides technical assistance for specialty coffee. What started with two interested producers has grown into the thriving Los Ramirez group, now comprising 30 producers.
Jesus manages two farms: La Falda in Selguapa and La Valeria in Intibuca, Montecillos. He inherited La Valeria, a single manzana of land, from his father in 2010 at just 17. Over the years, through hard work and loans, he expanded it to 5 hectares, cultivating varieties like Pacamara, Catuai, Paraneima, Bourbon, and IH-90. His dedication and expertise have not only grown his farms but also uplifted his community, fostering a robust specialty coffee culture in the region.
The Roast Profile and Roast Approach :
After measuring the moisture and density, and taking into consideration the high elevation this coffee was grown at, we anticipated that it could handle a lot of heat—and we were right. We pushed this coffee with a lot of heat for pretty much the whole roast. The final roast profile brings out a clean cherry and mandarin acidity, and a round cup with a delicate floral finish that reminds us of chamomile tea. We're excited to share this beautifully balanced coffee with you.
