About Vitelio and the Coffee's Processing :
From a young age, Vitelio felt a deep fascination with life in the countryside, especially with the exotic coffee varieties grown by neighboring farms. Among them, the Papayo variety captivated him the most, sparking a lasting passion for nature and its fruits. Later, after hearing about Pink Bourbon in another municipality in Huila, he made the personal decision to invest in the variety, purchasing several kilos of seed to plant across his farm. Known for its delicate character and exceptional cup quality, Pink Bourbon quickly became a reflection of his dedication to cultivating coffees that offer both elegance and complexity.
Harvesting is carried out by selecting only cherries that have reached peak ripeness, using a flotation process to help ensure consistency and quality throughout the main and mid harvests. After collection, the cherries undergo a careful hand sorting to remove immature, dry, or underripe beans so that only the best coffee continues forward. The coffee is then fermented in tanks, where it is fully demucilaged and thoroughly washed before being placed into sealed bags for four days, allowing fermentation to continue in a controlled environment. Following this period, the coffee receives a second wash and is then transferred to drying beds, where it dries for 8 to 15 days, depending on climate conditions, completing its transformation
The Roast Profile and Roast Approach :
For this roast, we focused on highlighting the coffee’s natural clarity and sweetness. A 3:30 drying phase allows for even moisture evaporation, followed by a 3:40 Maillard phase that builds sweetness and complexity. After first crack, a 1:20 development time helps round out the cup while preserving the coffee’s delicate character, resulting in a clean and balanced profile.
