About Yulieth and the Processing :

Villa Pastora, located in Palestina, Huila, was founded in the 1980s by Mrs. Pastora Anacona, the grandmother of Yulieth and Gerson, who planted the first coffee trees and began the family’s coffee tradition. Now in its third generation, the Mora Ortega family continues her legacy with a focus on producing high-quality, differentiated coffees through sustainable practices. Yulieth’s father, Álvaro Mora, has played a key role in expanding the farm while honoring his mother’s vision. Villa Pastora also supports the local community by employing workers from the area, providing fermentation guidance, offering drying services to neighboring producers, and collaborating on projects like Delagua to broaden the reach of their coffees.

Processing for this Ombligon begins with selective harvesting and cherry flotation before the coffee is depulped and placed into barrels for fermentation. A strain of Saccharomyces cerevisiae yeast is added to extend mucilage fermentation while the coffee remains submerged in water. After fermentation, the coffee is dried on patios for approximately 15 days. 


The Roast Profile and Roast Approach :

This coffee was roasted with a profile designed to emphasize clarity and structure. A 3:40 drying phase removes moisture steadily, followed by a 3:20 Maillard phase where browning reactions build sweetness and depth. We finish with a 1:20 development time to maintain vibrancy while rounding out the cup. This approach helps highlight the coffee’s natural fruit character while keeping the finish clean and balanced.
