The Fermentation Project

We’re excited to be taking part in The Fermentation Project, an initiative organized by James Hoffmann and Lucia Solis to explore how different fermentation methods can influence the flavor of coffee.

For this project, Lucia and her team processed the same lot of coffee in four different ways, allowing each method to be compared side by side while keeping the coffee itself consistent. From a mechanically demucilaged coffee with no fermentation, to wild fermentation, Lactobacillus, and Saccharomyces yeast, each process offers a different look at how fermentation can shape acidity, sweetness, body, and complexity.

At Lohner Coffee, we’re always interested in exploring how processing and roasting can transform a coffee, so we’re especially excited to roast these coffees and experience the differences for ourselves.
