About Angel Arturo Paz Ramirez:
Angel is a third-generation coffee producer who has worked with coffee processing at the San Vicente mill since he was young. He has worked with specialty coffee farmers for 15 years. In 2007, Angel purchased his first property to establish a coffee farm. That same year, he planted the farm with Red Catuai and named it “La Colmena.” In 2009, he began producing coffee and prepared his first microlot for specialty coffee.
Angel has participated in the Cup of Excellence competition since 2011, earning important placements over the years. In 2018, he purchased another property in El Dorado, Santa Barbara, where he planted different coffee varieties. He produced his first coffee from this farm in 2021, and the farm has since produced great and consistent coffees.
About the process Washed DRD:
This coffee uses a Washed DRD ( Dark Room Drying) process that combines extended anaerobic fermentation with controlled drying.
The coffee cherries are carefully picked at peak ripeness and transported to the wet mill, where they are placed in sealed plastic barrels for 48 hours of anaerobic fermentation. The cherries are then de-pulped, and the parchment, still covered in mucilage, is returned to a plastic barrel for an additional 48 hours of anaerobic fermentation. After fermentation, the coffee is thoroughly washed to remove the remaining mucilage from the parchment.
The washed parchment is then transported to a dark room where temperature and relative humidity are carefully controlled. Temperatures are kept below 18°C (64°F) to create a slower and more uniform drying process. The coffee is dried for approximately 25 days, until it reaches an ideal moisture content of 10.00%.
