About German and El Bebedero :
Germán tends his farm, El Bebedero, in the village of Gracias a Dios in northern Peru alongside his wife Keyla and their two daughters. Coffee is deeply rooted in his family’s story. He inherited the land from his father, who arrived a generation ago with the goal of building a life through coffee. Today, Germán works full time in coffee alongside a network of siblings, cousins, and uncles, collectively managing 14 hectares and sharing a family drying facility.
Perched at 1600 meters on the edge of the Amazon rainforest, El Bebedero benefits from a rare combination of high elevation and rich biodiversity. Driven by curiosity and a desire to stand out, Germán has planted a diverse range of varieties while also experimenting deeply with processing methods. For this lot, ripe cherries are carefully selected, floated, and then sealed in a tank for 72 hours to undergo anaerobic fermentation. The coffee is then transported to a lower, drier climate near the Marañón River, where it is slowly dried on shaded raised beds for about 20 days, allowing for even, controlled drying and a clean, expressive cup.
