About Valerio and La Estrella : 

Valerio Roman Jimenez is the owner of Finca La Estrella, a 2.5-hectare farm established in 2005 in the highlands of Cajamarca, Peru. The farm is home to around 8,000 Gesha and Caturra trees, grown alongside traditional crops like yuca and plantains. Located in one of Peru’s most important coffee-producing regions, Valerio’s work reflects the dedication of the area’s smallholder producers, many of whom farm just a few hectares while focusing on quality-driven, often organic practices. Cajamarca’s fertile soils, tropical climate, and high Andean elevations create exceptional conditions for specialty coffee production, helping coffees from the region gain increasing recognition.

This lot is processed using a semi-washed method, a style commonly found throughout the region that helps balance clarity with sweetness and texture in the cup. After harvesting, the coffee is carefully depulped and partially washed before drying, allowing the character of the Gesha and Caturra varieties to shine through while preserving the sweetness developed during processing. The result is a coffee that reflects both the unique environment of Cajamarca and the careful work happening at Finca La Estrella.
